Paddock Club chef and co-owner Lynn Chisholm has a resume as long as your arm, having worked in a number of well-known Milwaukee restaurants before diving in to open her own place in Elkhart Lake. As Chisholm prepares for an appearance at Kohler Food and Wine Experience, Oct. 23-26, we caught up with her to ask her about her background, opening and running her own restaurant and some of her favorite things.
