Clock Shadow Creamery, the first urban cheese factory in Wisconsin, opened in April 2012 on the ground floor of the "green" Fix Building, 138 W. Bruce St. Recently, we went on a tour of the facility and learned all sorts of fun facts like "what makes a cheese curd squeak?"
