Potawatomi Hotel & Casino announced today that it has hired Mark Shoup as the new chef for Dream Dance Steak.
Shoup comes to the position with more than 30 years of experience cooking in venues both nationally and internationally. A Michigan native, Shoup is also a graduate of the Culinary Institute of America
"This place has me really excited about food again," Shoup noted in a press release regarding his new post. "I have an idea about what Dream Dance is, and new and exciting ideas about what it’s going to be."
While Dream Dance Steak will maintain its signature steakhouse feel, Shoup will make his mark with a variety of subtle changes including an emphasis on local ingredients and seasonal dishes. On the docket are specials like a "fish of the day" as well as new appetizers and desserts.
Shoup takes over the reins for Chase Anderson who departed from Potawatomi this past spring.

In 2024, Lori was honored with a "Top 20 Women in Hospitality to Watch" award by the Wisconsin Restaurant Association.
When she’s not eating, photographing food, writing or planning for TV and radio spots, you’ll find Lori seeking out adventures with her husband Paul, traveling, cooking, reading, learning, snuggling with her cats and looking for ways to make a difference.
